Food and People A
This course places emphasis on the practical aspects of food preparation and related areas. In line with increased job opportunities in the hospitality and tourism industry, and other sectors, the course provides experience in cookery skills and techniques, menu patterns and planning, food service, cultural and social variations in food preparation and consumption.
Food Science and Resource Management T
This Tertiary accredited course aims to give students an understanding of various aspects of food as a resource. Areas of study include socio-cultural, nutritional, scientific, managerial and technological influences on the production, distribution, storage, preparation and consumption of food. This course provides useful preparation for further studies in health sciences including nursing, dietetics, nutrition, food technology and management in the hospitality industry.
Fashion Design T/A
This course combines theoretical and practical approaches to a study of the technological, aesthetic, and psycho-social aspects of textiles. Emphasis is placed on the development of initiative, independent thinking, investigative and creative skills. This course provides useful preparation for further studies in all areas of the fashion industry and textile technology. The Accredited course focuses on the development of practical skills in the field of fashion and textiles. Emphasis is placed on encouraging students to develop higher levels of initiative, independence, creativity and organisational ability. Students will be able to plan their own project work and will be provided with the guidance necessary to achieve this. Whatever their current level of interests, skills and abilities, students will have the opportunity to extend these as well as learn and develop new ones. The content of the units is similar to the Tertiary accredited course, however, practical work will have a greater emphasis in the Accredited course.
Hospitality A/V
To gain a Certificate I in Hospitality Operations students need to complete two semesters in Year 11. To gain a Certificate II in Hospitality Operations, students need to study four semesters of Hospitality. Students studying this course are well equipped to pursue a career in the exciting field of hospitality. On completion of this course students will obtain a Certificate I or II in Hospitality Operations.
Students who obtain either of these certificates are able to perform a range of hospitality activities and functions requiring basic operational knowledge and a practical level of skill. Students are able to complete units of competency by operating a college restaurant and cafe and by active involvement at college functions where hospitality is required. Students also have the opportunity to participate in vocational placements with a host employer. This is a highly valued opportunity and many students benefit greatly from this experience.
Music Industry A/V
This course is designed to enable students to enter the dynamic field of contemporary music with skills in production, promotion or performance. Students elect to do one of these three streams and can achieve a nationally recognised Certificate I or II in Music Industry (Foundation). This can lead towards a Certificate III or IV at CIT or various other registered training organisations around Australia. Students achieve valuable on-the-job training through work placements with employers associated with the local music industry, and gain valuable industry knowledge and contacts.
There are opportunities to participate in live performances as a player, engineer or promoter, and to gain competencies through work done in class as well as through work placements.
To gain a Certificate II, students need to study Music Industry over three semesters, and complete two one- week-long work placements. To gain a Certificate I, students need to study Music Industry over two semesters, and complete a one-wee- long work placement.Furniture Construction A/V

Students undertaking this course will develop the skills and knowledge required to enter employment and/or further training in the furniture industry trades. These could include: cabinet making, kitchen renovation, upholstery, antique restoration, picture framing, soft furnishing etc. Students will have the opportunity to complete a Certificate I in Furnishings, over a period of four semesters.
Design and Graphic Communication T/A
This course consists of the drawing and design units that cover a broad range of technical and freehand drawing skills, computer-aided drawing and design, design principles, graphic design, and presentation techniques and Australian drawing standards. This course provides useful preparation for future study in tertiary subjects such as architecture, engineering, interior design, industrial design and graphic design. Students wishing to pursue a technical career at diploma, certificate or trade course levels will also benefit from the course.
General Construction A/V
This is a pre-employment program intended for students with an interest in developing skills and knowledge in the building and construction industry. This is a competency based course and students will be provided with a range of learning experiences to develop competencies leading to a Certificate II in General Construction. Work placements and SNAPS opportunities are provided through the Canberra College with some assistance from the Student to Industry Program. The Certificate II in General Construction is completed over four semesters.
Automotive Technology A
This course aims to provide students with an understanding of automotive vehicle systems and the operating principles of motor vehicles. The emphasis is on practical work, including instruction in safe workshop practice and tool selection. Students are expected to provide suitable components to complete the practical requirements of each unit.
Metals Fabrication A/V
Students who are looking to enter trade or design courses through CIT or similar institutions will benefit from the experiences offered in this course. Students may achieve a Certificate I in Engineering on completion of this course. It will provide students with learning experiences to develop basic knowledge, skills and understanding required by the metal trades and engineering industries. This is a competency based course providing the skills required for entry level employment opportunities in various manufacturing, engineering and maintenance industries
Business Administration A/V
In this course, students can gain a nationally recognised vocational Certificate I or Certificate II in Business Services, which can be a pathway to further study at CIT or elsewhere. This course is also particularly useful for students who wish to join the public service at the end of their studies at college. You will learn about all aspects of business operations, and be assessed on competencies directly related to this subject area. There are opportunities to attend excursions to small businesses, such as local coffee shops, to investigate how these small business people operate their own small businesses. A must for the future entrepreneur! Work placements and SNAPS opportunities will be provided through contact with local businesses and companies.
Retail A/V
In this course, students can gain a nationally recognised vocational Certificate I or Certificate II in Retail, which can be a pathway to further study at CIT or elsewhere. Work placements and SNAPS opportunities will be provided through contact with local businesses and companies.
To gain a Certificate I in Retail Operations, students must study Retail for one year and do two one-week-long work placements, or gain recognition of current part time work.
To gain a Certificate II, students must study the subject over four semesters, complete four week- long work placements, or gain recognition of current part time work.
Tourism A/V
In this course, students can gain a nationally recognised vocational Certificate II in Tourism (Operations). Students learn about events promotion and management, and ticketing and marketing. There are opportunities to visit tourism venues, both locally and interstate, and then to pursue further studies in the area at CIT, or to enter the tourism industry locally, interstate or even overseas. To gain a Certificate II in Tourism (Operations) students must study Tourism over four semesters.
